Kitchen gear

  • Small saucepan
  • Whisk

Method

  1. Melt the butter in a small saucepan over medium-low heat. Whisk in the flour and cook for 1 minute without letting it brown.

  2. Slowly whisk in the milk and simmer gently, whisking, for 2 to 3 minutes until it thickens slightly.

    3 min
  3. Turn the heat to low. Add the cheese slices, then the cheddar a handful at a time, stirring until each addition melts. Do not let it boil, or it can turn grainy.

  4. Stir in the cayenne, paprika, garlic powder, chopped jalapeños and brine. Taste and add salt, or more cayenne for more heat.

  5. Serve warm over crunchy beef tacos, nachos or a burrito. It thickens as it cools; loosen it with a splash of milk. Keep leftovers in the fridge for up to 3 days and reheat gently.

Tips for a closer clone

  • Grate the cheddar yourself if you can. Pre-shredded cheese has an anti-caking coating that can make the sauce gritty.
  • Low heat is the whole trick. If the sauce starts to look oily, take the pan off the heat and whisk in a spoonful of cold milk.
  • Blend it with a stick blender for 10 seconds if you want it completely smooth, like a pump-bottle sauce.
  • For the closest color, use orange cheddar and do not skip the paprika.

About this dupe

Gone but not forgotten

Lava Sauce arrived with the Volcano Taco in the fall of 2008: a spicy nacho cheese made with habanero and red jalapeño peppers. Taco Bell dropped the Volcano Menu in 2013 and brought Lava Sauce back for a limited run from June 29 to August 2, 2023 (AOL, updated October 6, 2026). In January 2026 the chain launched a different Volcano Sauce with the returning Volcano Quesarito (Nation’s Restaurant News, January 8, 2026). The original Lava Sauce is off the menu, so homemade is the only way.

How this version works

A small butter-and-flour base keeps the cheddar smooth, two slices of processed cheese stop it splitting, and paprika gives the orange color. The heat comes from cayenne and pickled jalapeños; add a few drops of habanero hot sauce if you want the original’s sharper burn.

UK cooks

No US-only cheese is needed: use mature cheddar or red Leicester and any burger cheese slices. Jarred sliced jalapeños are in most big supermarkets.
