Kitchen gear
- Wide pan or sauté pan with a tight lid
- Fine-mesh sieve, for rinsing the rice
Method
-
Rinse the rice in a sieve under cold running water, swirling it with your fingers, until the water runs almost clear. Leave it to drain.
-
Warm the oil in a wide pan that has a lid over medium heat. Add the onion and both peppers with a pinch of salt and cook, stirring now and then, until soft and just catching at the edges.
-
Stir in the garlic, tomato paste, paprika, turmeric, pepper flakes and oregano. Keep stirring for 1 minute, until the paste darkens and the spices smell toasted; turn the heat down if they start to stick.
-
Tip in the drained rice and stir for 2 minutes, until every grain is coated in the orange base.
-
Pour in the hot stock, bring it to a steady simmer, then cover, turn the heat to low and cook without lifting the lid.
-
Take the pan off the heat and leave it covered to steam. Fluff the rice with a fork, taste, and season with salt.
Tips for a closer clone
- Use sweet paprika, not smoked: the restaurant rice tastes peppery and bright rather than barbecue.
- The heat lives in the pepper flakes. Start with 1/4 tsp, taste the finished rice, and go up to 1/2 tsp next time.
- Cut the peppers small, about the size of a grain of corn, so they melt into the rice like the original.
- Cool leftover rice quickly, keep it in the fridge and reheat it only once, until steaming hot all the way through.

About this dupe
UK and US: every ingredient is sold in both countries. In the UK, tomato paste is tomato purée and crushed red pepper is sold as chilli flakes.
vs the original: Spicy Rice is on the Nando’s UK menu as a regular or large side (the large serves 2) (checked 14 Oct 2026). Chicken stock works in place of the vegetable stock if that is what you have.
