Method

  1. Char the bell pepper under a hot broiler or over a gas flame, turning, until blackened all over. Seal it in a bowl for 10 minutes, then peel, seed and roughly chop it.

    10 min
  2. Blend the pepper with the chilli flakes, garlic, lemon zest and juice, vinegar, olive oil, smoked paprika, oregano and salt until smooth. Set 1/4 cup aside in the fridge for basting before any of it touches raw chicken.

  3. Spatchcock the chicken: cut out the backbone with kitchen scissors, flip it, and press down on the breastbone until it lies flat. Cut 2 or 3 slashes to the bone in each leg and thigh.

  4. Rub the rest of the marinade all over the chicken and under the breast skin. Cover and refrigerate for at least 4 hours, or overnight.

    4 hr
  5. Heat the oven to 425°F (220°C). Roast the chicken skin side up on a rack over a lined tray for 35 to 45 minutes, brushing with the reserved marinade halfway, until the thickest part of the thigh reaches 165°F (74°C).

    40 min
  6. Switch to the broiler for 2 to 3 minutes to char the skin in spots, watching closely. Rest for 10 minutes, then cut into 4 quarters: 2 breast and wing, 2 leg and thigh.

    10 min

Tips for a closer clone

  • Taste the marinade before it goes on the chicken; that is the heat you will get, so add flakes now, not later.
  • Slashing the legs to the bone lets the marinade in and helps the dark meat cook as fast as the breast.
  • On a covered barbecue, cook over indirect medium heat, skin side up, then finish over the coals for the char.
  • Serve with spicy rice, garlic bread or chips and an extra bowl of the basting sauce on the side.

About this dupe

UK and US

Dried chilli flakes keep this recipe the same in both countries. If your supermarket sells fresh red bird’s eye chillies, blend 2 to 4 of them in place of the flakes for a fruitier heat. In the UK, the broiler is the grill.

vs the original

On the menu in the UK, where we checked the chain’s menu page on Oct 14, 2026, and at a smaller number of US restaurants. The restaurant chicken is cooked over a flame grill; an oven finished under the broiler, or a covered barbecue, is the closest home setup.

What it costs: ingredient costs are estimates for the amount used, from supermarket listing prices checked on Oct 14, 2026 (Target.com in the US, Trolley.co.uk for UK supermarkets). Prices vary by store and week.
