Kitchen gear

  • Large frying pan (skillet)
  • Instant-read thermometer
  • Wire rack

Method

  1. Mix the chicken, salt, white pepper and onion powder in a bowl. Divide into 4 equal portions and press each one on parchment into a round about 4½ in (11 cm) across and a scant ½ in (1 cm) thick, a little wider than the bun because it shrinks as it cooks.

  2. Chill the patties for 15 minutes so they hold their shape during coating.

    15 min
  3. Set out three shallow dishes: the flour, the beaten egg and the breadcrumbs. Coat each patty in flour, then egg, then press it firmly into the crumbs on both sides.

  4. Heat ½ in (1 cm) of oil in a large frying pan (skillet) to 350°F (175°C). Fry 2 patties at a time for 3 to 4 minutes per side, until deep golden and the center reaches 165°F (74°C). Drain on a wire rack.

    8 min
  5. Toast the cut sides of the buns in a dry pan for about 1 minute while the second batch fries.

  6. Build each sandwich: bottom bun, chicken patty, a handful of shredded lettuce, then the top bun spread with 1 tbsp mayo. Wrap each one in parchment for a minute so the bun softens slightly, then serve.

Tips for a closer clone

  • Shred the lettuce as finely as you can and keep it cold. It should be a crisp, cool contrast to the hot patty.
  • Press the patties thin and even: a thin patty cooks through before the crumb gets too dark.
  • Fine breadcrumbs give the tight, even crust. If you only have panko, blitz it for a few seconds first.
  • Coated patties freeze well on a tray. Fry them from frozen at 325°F (165°C) for 5 to 6 minutes per side, until the center reaches 165°F (74°C).
  • Air fryer: spray the coated patties with oil and cook at 400°F (200°C) for 10 to 12 minutes, turning once, until the center reaches 165°F (74°C).

About this dupe

UK and US: The Mayo Chicken is a UK menu item, so this recipe is written for UK kitchens first: chicken mince, plain flour, onion granules and soft white rolls. In the US, use ground chicken, all-purpose flour, onion powder and plain hamburger buns. Quantities are the same in both countries.

vs the original: McDonald’s UK sells it as a breaded chicken patty with shredded lettuce and mayo in a plain bun. We could not confirm its current price, so this page shows the homemade cost only.
