Method quantities are for the original 6 half-cup servings.
Kitchen gear
- Small heavy saucepan
- Balloon whisk
Method
-
Melt the butter in a small saucepan over medium heat until it foams.
-
Whisk in the flour to a smooth paste. Turn the heat to medium-low and keep stirring, scraping the corners, until the roux is the color of peanut butter and smells nutty.
-
Take the pan off the heat and pour in about a third of the chicken stock while whisking hard; it will clump, then loosen. Return the pan to the heat and add the rest of both stocks a splash at a time, whisking until smooth.
-
Whisk in the soy sauce, onion powder, garlic powder and black pepper. Simmer gently, stirring often, until the gravy coats the back of a spoon.
-
Taste before adding any salt, because stock and soy sauce are already salty. If it sets too thick, whisk in a splash of hot water. Serve hot.
Tips for a closer clone
- The color comes from the roux, so take your time in step 2: a pale roux gives a beige gravy.
- Push the finished gravy through a sieve if you want it completely smooth.
- It thickens as it cools. Reheat it in a pan with a spoon or two of water, whisking until it pours again.

About this dupe
UK and US: the same method works in both countries. In the UK, use plain flour, stock cubes and dark soy sauce, and look for onion and garlic granules in the spice aisle.
Why two stocks: chicken stock gives the base flavor, and a smaller amount of beef stock adds the deep brown color and savory backbone of a fast-food gravy without any gravy granules.
