Kitchen gear
- Food processor, or a large chef's knife
- Box grater
- Large mixing bowl
Method
-
Quarter the cabbage, cut out the core and chop it into chunks. Pulse in a food processor in batches until the pieces are about the size of rice grains, or chop by hand with a big knife. Tip into a large bowl.
-
Grate the carrot on the fine side of a box grater and add it to the cabbage. Grate the onion straight over the bowl so the juice goes in too.
-
In a separate bowl, whisk the mayonnaise, sugar, milk, buttermilk, lemon juice, vinegar, salt and pepper for about 1 minute, until the sugar has dissolved.
-
Pour the dressing over the vegetables and fold until every piece is coated. It will look too wet. That is right.
-
Cover and refrigerate for at least 2 hours, or overnight for the closest result.
-
Stir well before serving and keep it in the fridge. Eat within 3 days.
Tips for a closer clone
- Chop finer than feels sensible. Pieces the size of rice grains are what make it taste like the restaurant side.
- Make it a day ahead. The cabbage softens and the dressing gets thinner and sweeter overnight.
- If it looks dry after chilling, stir in a splash of milk rather than more mayonnaise.
- No buttermilk? Stir 1 tsp lemon juice into ¼ cup milk and leave it for 5 minutes.

About this dupe
What makes it taste like the original
Two things: the chop and the rest. The cabbage is cut almost as fine as rice, not shredded into strands, and the slaw sits in the fridge for hours so the dressing turns thin, sweet and milky. Skip the chilling and you get a crunchy salad instead of the side you know.
UK and US
Every ingredient is sold in both countries. UK cooks can use a white cabbage or a pointed sweetheart cabbage, and buttermilk is in the chiller next to the cream. Any white vinegar works: distilled white in the US, white wine vinegar in the UK.
Vs the original
Coleslaw is a long-running KFC side, but sides, sizes and prices change by restaurant and by country, so check your local menu. This batch makes 8 portions of about ¾ cup (175 ml) each.
