Kitchen gear

  • Fine sieve
  • Small jar with a lid, for storing

Method

  1. Spoon the relish into a fine sieve and press out most of the brine with the back of a spoon. (If using gherkins, chop them very finely first, then press.)

  2. In a small bowl, stir the vinegar and sugar together for about 30 seconds, until the sugar dissolves.

  3. Add the mayonnaise, ketchup, drained relish and paprika and whisk until the sauce is an even pink-orange with flecks of pickle. Taste and add a pinch of salt if it needs it.

  4. Cover and refrigerate for at least 1 hour so the flavors blend.

    1 hr
  5. Stir before using. Spread it on both cut sides of a toasted bun, or spoon it over fries with grilled onions and melted cheese. It keeps for up to 5 days in a covered jar in the fridge.

Tips for a closer clone

  • Drain the relish well. Extra brine makes the sauce thin and too sharp.
  • Use full-fat mayonnaise; reduced-fat versions turn runny after a night in the fridge.
  • Make it the day before if you can. The pickle and vinegar mellow into the mayo overnight.
  • For a burger, spread it on both cut sides of a toasted bun so every bite gets some.
  • UK: pickled gherkins plus a little extra sugar stand in for American sweet relish.

About this dupe

UK and US: In-N-Out only has restaurants in the US, so in the UK this is the only way to get the spread. American sweet pickle relish is hard to find in UK supermarkets: chop pickled gherkins very finely and add an extra ½ tsp of sugar. Everything else (mayonnaise, ketchup, paprika and distilled white vinegar) is a direct match.

vs the original: Spread is the sauce on In-N-Out burgers and on its Animal Style fries. We do not know the exact recipe; ours is a Thousand Island-style mix built on mayonnaise, ketchup and sweet relish, balanced with a little vinegar and sugar.
